Saturday mornings are all about cartoons and made-from-scratch awesome breakfasts. At least that's how we do Saturday mornings before 9am when the hustle and bustle of the day/weekend really begins. If the monotony of waffles and pancakes has you down, then you should make these Banana Oatmeal Cookies. They're really dessert but I disguised them as breakfast simply by serving them before noon. They have all the same ingredients as many breakfasts at our house, just in a different form.
When making these cookies, I followed the instructions as they're written with a couple exceptions:
Instead of cutting shortening into the dry ingredients, I placed the shortening into the bowl of my KitchenAid mixer. To that I blended egg the mashed banana. Next, I added the dry ingredients, followed by the oatmeal, and chocolate chips instead of nuts at the end.
I also only made one tray of cookies (a dozen). I wanted to experiment with this recipe to find out if it also doubles as a bar option. I lined an 8x8 glass baking dish with parchment paper (you can also use non-stick spray) to make it easy to lift out after it's baked. Unsure of how long to bake, I started with 15 minutes and added 5 minute increments from there. If making bars, using 2/3 of the recipe I baked at 350*F for 45 minutes.
If you remember from my previous posts, my oven isn't exactly the most reliable for times so please pay attention to your bars as they're baking. You'll know they're done when the batter has a slight spring back (like a cake), and/or when a toothpick is inserted it comes out with a couple crumbs on it.
As I thought it would, the baked pan cookie came out easily. I experimented with slicing this into bars while hot and cold. It seemed to cut better when cold. The photo below shows a chocolate chip, the texture on the inside, and the overall color of the finished product.
I am inclined to believe the original recipe was written by my Great Grandmother, Mary Cornelia Southcombe Bundy, looking at her handwriting and knowing of other recipes that she has written in Lala's collection. It was smart of Lala to type this one up. There are many recipes that are written in "Mother Bundy's" handwriting that have a new copy stapled or paper clipped over the top. From generation to generation, L'dor v'dor.
